Italian Apple Salad Recipes

Try these easy, healthy apple salad recipes. The apples are crisp and cool, perfect for warm weather lunches.

Apple & Cauliflower Salad

Ingredients

  • 1 head cauliflower, cut into florets
  • 1 Granny Smith apple, cored and cut into 3/4" cubes
  • 2 Red Delicious apples, cored and cut into 3/4" cubes
  • 1 green onion, thinly sliced
  • 1/4 cup radicchio, julienned
  • 1/2 cup parsley, chopped
  • 1 Tbs pine nuts
  • 3/4 cup ricotta
  • 2 Tbs extra-virgin olive oil
  • 1/4 cup lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper, freshly ground

Directions

  1. In a large bowl gently toss together the cauliflower, apples, green onion, radicchio, and parsley.
  2. Add the ricotta, olive oil, lemon juice, salt, pepper, and pine nuts to the bowl. Toss and serve.

Italian Apple Salad

Ingredients

  • 1 red onion
  • 2 Red Delicious apples
  • 2 Granny Smith apples
  • 1/4 cup lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 4 Tbs extra-virgin olive oil
  • 2 Tbsp red wine vinegar

Directions

  1. Cut the onions into thin slices. Place the onion slices in a bowl of water and let them soak for at least 10 minutes.
  2. Core and cut the apples into thin slices.
  3. Place the apple slices into a bowl and pour the lemon juice over the apple slices.
  4. Place the olive oil, vinegar, salt, and pepper in a bowl. Whisk together the ingredients together.
  5. Place the apple and onion slices in layers in an oval serving dish.
  6. Pour the vinaigrette over the layers of onion and apples.

Note: Pliny the Elder, a Roman statesman, circa 23 CE, described 37 different varieties of cultivated apples in his Historia Naturalis. Unpeeled apples provide their most plentiful nutrients just under the skin. Apples are a good source of potassium, folic acid, and vitamin C.
