Tomato, Caper and Gorgonzola Salad Recipe

Enjoy this beautiful salad as an antipasto!

This is an easy dish that you can use as an antipasti or as a salad course. If the Gorgonzola cheese is too strong, try fresh mozzarella or feta. I sometimes leave out the anchovies, depending upon my mood. That's the great thing about this dish, there are few absolutes

Tomato, Caper, and Gorgonzola Salad

Ingredients

  • 3 large tomatoes, sliced (get the best tomatoes you can afford)
  • 1 Tbs balsamic vinegar
  • 2 Tbs extra-virgin olive oil
  • 1/3 cup shaved or crumbled Gorgonzola cheese
  • 1 Tbs capers, drained
  • 1 Tbs green onions, sliced
  • 1 clove garlic, minced
  • 2 anchovies, drained and minced to a paste
  • salt
  • black pepper, freshly ground
  • fresh basil

Directions

  1. Arrange tomatoes on a plate.
  2. Drizzle with vinegar and oil.
  3. Sprinkle lightly with salt and fresh ground pepper.
  4. Sprinkle with cheese, capers, onions, garlic, and anchovies.
  5. Garnish with basil leaves.
