Enjoy this beautiful salad as an antipasto!
This is an easy dish that you can use as an antipasti or as a salad course. If the Gorgonzola cheese is too strong, try fresh mozzarella or feta. I sometimes leave out the anchovies, depending upon my mood. That's the great thing about this dish, there are few absolutes
Ingredients
- 3 large tomatoes, sliced (get the best tomatoes you can afford)
1 Tbs balsamic vinegar- 2 Tbs extra-virgin olive oil
- 1/3 cup shaved or crumbled Gorgonzola cheese
- 1 Tbs capers, drained
- 1 Tbs green onions, sliced
- 1 clove garlic, minced
- 2 anchovies, drained and minced to a paste
- salt
- black pepper, freshly ground
- fresh basil
Directions
- Arrange tomatoes on a plate.
- Drizzle with vinegar and oil.
- Sprinkle lightly with salt and fresh ground pepper.
- Sprinkle with cheese, capers, onions, garlic, and anchovies.
- Garnish with basil leaves.
